FEATURES
The 2017 Agnès Paquet Auxey-Duresses Blanc comes from a self-created domaine, with vines inherited from the winemaker's grandparents. This white Burgundy is sourced from 90-year-old vines in "Les Hoz," a terraced, cool-climate, south-facing site with white limestone soils, considered a "super white terroir". The winemaking process involves ambient yeast fermentation and 12 months of barrel aging (with minimal new oak), followed by a further three months in tank before bottling without filtration.
Tasting notes from the Vivino community highlight an "extremely buttery from careful oaking" and a "balanced VFM butter oak" profile. Specific descriptors include butter, oak, vanilla, citrus (lemon, grapefruit), minerals, honey, smoke, apple, pear, green apple, almond, biscuit, toast, cream, yeast, and lemon curd. Burgundy-Report describes a "fresh, sweeter, wide nose" that "melts over the palate, mouth-watering, some oak is visible, again a little finishing minerality and faint oak too. Tasty and still to wait for".
🍴 Food pairing suggestions are broad, including shellfish, pasta, rich fish (like salmon or tuna), mild and soft cheeses, and cured meats. It's particularly well-suited for butter-poached halibut or other creamy seafood dishes.
🥂 This versatile white Burgundy is suitable for various dining occasions, from casual gatherings to more formal settings, especially when paired with seafood or creamy preparations. Its character suggests it can be enjoyed now or cellared for a short period to further develop its complexity. 【From 90-year-old vines in a "super white terroir" of Auxey-Duresses, showcasing a balanced oaked Chardonnay style】.
