The Joseph Drouhin Chablis Réserve de Vaudon 2023 is an elegant wine, showcasing the classic characteristics of Chablis. The 2023 vintage in Burgundy was notably one of the hottest years, even surpassing 2022, yet the grapes were harvested at perfect maturity. This has resulted in very aromatic wines with notes of yellow fruits mingling with floral hints, offering generosity, freshness, and finesse. The wine presents a brilliant color with hints of green. On the nose, typical Chablis aromas of citrus (lemon), fern, and even salty sensations predominate. The palate is vigorous and lively, yet soft, with a lot of finesse and balance. Joseph Drouhin has been a pioneer in revitalizing the Chablis area since the 1960s and practices organic and biodynamic viticulture. The unique Kimmeridgian limestone soil, rich in marine fossils, imparts the distinctive flavor to Chablis wines.
🍴 Food Pairing: This Chablis is excellent with oysters, grilled fish, seafood platters, and goat cheese. Its vibrant acidity and minerality also make it a great match for sushi and sashimi. For Eastern cuisine, consider it with steamed fish with ginger and scallions, or light dim sum.
🥂 Event Suggestions: Ideal for an aperitif, a seafood dinner, or a summer garden party. Its refreshing character makes it perfect for celebrations and gatherings where fresh, light fare is served. 【Kimmeridgian Limestone Minerality】
BACKGROUND
Joseph Drouhin is one of Burgundy's most important wine producers, France. The primary grape variety is Pinot Noir, with a small portion being Chardonnay. Founded in Beaune in 1880, the domaine has expanded throughout the 20th Century to include vineyards in Chablis, the Côte de Nuits, the Côte de Beaune and the Côte Chalonnaise, making everything from simple, village-level cuvées to highly priced grand cru and premier cru wines from Pinot Noir and Chardonnay.
