FEATURES
The 2015 Salon Champagne hails from a warm vintage, characterized by a mild, wet autumn and winter, followed by a dry, sunny summer from mid-May to mid-August. Rain in mid-August and fine, cool, sunny weather in early September led to the harvest commencing on August 29th. This vintage, while sharing some characteristics with 2003, offers a superior balance of weight and freshness. This is a particularly rare release, being only the 45th expression of Salon in its 120-year history, produced exclusively in "great" years. Climate change has notably influenced the increased frequency of Salon releases in the 21st century.
This Champagne reveals a brilliant golden hue with green and silvery highlights, showcasing remarkable effervescence. The bouquet is delicate and precise, dominated by white flowers like linden and honeysuckle, complemented by notes of chamomile, pineapple, beeswax, and a persistent chalky minerality. On the palate, it is generous and vibrant, striking a captivating balance between saline freshness and brightness. It boasts a rich and fleshy texture, indicative of a warm year with very ripe grapes, yet it maintains its energy. The acidity elegantly structures the wine, leading to a dry and intense finish that lingers with an intensifying mineral impression of chalk. Initial shyness on the nose gives way to richness on the palate, with hints of peppery spice, white peach, quince, and a stone-fruit fleshiness. It's full-bodied yet delicate, with a muscular profile that remains tailored. 【Rarity and exceptional quality from a "great" year】
🍴 Food Pairing: This exquisite Champagne pairs beautifully with oysters, where its vibrant acidity and minerality elegantly balance the salinity. It also complements langoustines, lobster, crab, and shrimp with great refinement. For more elaborate dishes, consider a salmon terrine with oysters in aspic, or pig's trotters. Shellfish in general is an excellent match.
🥂 Event Suggestions: The 2015 Salon is a stunning and marvelous wine, perfect for grand celebrations, significant anniversaries, or as an impressive aperitif. It is also a wine that promises to improve with several years in the bottle, making it an excellent choice for cellaring and future enjoyment.
