FEATURES
🏰A singular Sancerre Rose crafted from 100% Pinot Noir, known for its ability to age gracefully for decades and its unique blend of plush richness with laser-like cut and energy. Pascal Cotat, like his cousin Francois, creates uncanny wines from the Chavignol slopes, where the family has tended grapes since WWII. This 2022 rose, made from 80+ year old vines, is direct pressed, fermented on indigenous yeasts, and aged in old tonneaux, bottled unfined and unfiltered. It presents a beautiful pale pink with a hint of salmon, offering a bright and floral nose with red fruit and citrus, alongside aromas of citrus zest, red apple, summer berries, and light herbs. The palate echoes red fruits like strawberry and red currant, ripe orange melon, with a textured yet very dry profile, stone fruits, crushed stones, and light pepper, culminating in a well-balanced, fresh, mineral-driven, and long finish.
🍴 This rose pairs well with roast white meats, white sauce, spicy food, fried food, and as an aperitif. It's also excellent with rich seafood, aged cheese, and poultry like quail in rose sauce.
🥂 Ideal for a summer gathering, an elegant lunch, or as a versatile wine to accompany a variety of dishes.
