FEATURES
Les Cailloux du Paradis Racines Blanc 2020 is a natural, ecological, and biodynamic barrel-aged white wine crafted by Claude Courtois and his son Etienne in the Loire Valley. This pioneering estate, active since the 1970s, is renowned among natural wine enthusiasts for its unconventional approach. The vineyards, located in Soings-en-Sologne, are cultivated without chemicals, focusing on biodynamic and ecological methods to revitalize the soil and foster a rich natural environment. The Racines Blanc is a unique field blend of at least 12 different white varieties, including Chardonnay, Romorantin, Sauvignon Blanc, and Menu Pineau. Grapes are hand-harvested, destemmed, gently pressed, and undergo spontaneous fermentation with native yeasts, followed by an extensive 30 months of aging in wooden barrels.
