FEATURES
The 2024 Clos Cibonne Tibouren Rosé Côtes-de-Provence is a unique and iconic wine, distinct from most other rosés in the region. It prominently features the rare Tibouren grape (90% Tibouren, 10% Grenache) and is celebrated for its texture, substance, and remarkable ability to age gracefully for a decade or more. As one of the 18 Cru Classés of Côtes de Provence, its vineyards benefit from a special microclimate near the Mediterranean, providing cool air and excellent ventilation. The wine exhibits a glossy light amber/copper color, with an airy yet intense profile. Tasting notes reveal red berries, wild herbs, chamomile, beeswax, toasted bread, and a distinctive savory/herbaceous edge from its sous-voile aging. It's medium-bodied but weighty, with real structure, offering savory rather than purely fruity notes, and a long finish with saline minerality. The wine is aged for a year under a thin veil of flor in 120+ year-old foudres, a traditional Sherry- and Jura-like technique that imparts unique savory depth and texture. It is also certified organic. 【A unique Cru Classé rosé, distinguished by its dominant Tibouren grape and a traditional sous-voile aging process in ancient foudres, yielding a complex, savory, and age-worthy wine unlike any other in Provence.】
Food pairing suggestions include pissaladière, artichokes à la barigoule, grilled branzino with herbed olive oil and lemon, Niçoise salad, pan-seared scallops, bouillabaisse, grilled fish, roast chicken, aioli, or other Mediterranean fare. It's also considered a great pairing for chicken and lamb kebabs, and even a Thanksgiving or special occasion bottle.
This is a serious, gastronomic rosé, perfect for the dining table rather than just a casual poolside sipper, and suitable for special occasions where its complexity can be appreciated.
