The 1999 Jean Marc Boillot Pommard 1er Cru Les Jarollieres comes from a domaine known for producing highly concentrated, rich, and ripe wines, with Jean-Marc Boillot having inherited vineyards from both his grandfather and his maternal grandfather, Etienne Sauzet. Red wines from this estate are typically aged in 50% new oak barrels for around 16 months. This particular vintage is praised for its smoky aromatic depth, ripe black fruits, and a peppery background note. On the palate, it offers a deep taste with a rich succession of fruity and spicy notes, being powerful, ample, and fleshy with mouth-coating tannins. Community reviews often highlight red fruit notes like cherry, strawberry, and raspberry, alongside oaky nuances of vanilla and cedar, and earthy undertones of mushroom and smoke. 【Critics have scored this as one of the top 5 Pommard Les Jarolieres wines.】
Food pairing suggestions: This elegant red Burgundy pairs beautifully with classic French dishes such as duck, goose, and various game birds. Consider it with roasted guinea fowl or a rich mushroom risotto.
Event suggestions: This wine is a sophisticated choice for a special dinner party, particularly when serving game dishes, or for any occasion celebrating the timeless elegance of classic red Burgundy.
BACKGROUND
Domaine J.M. Boillot (also known as Domaine Jean-Marc Boillot) is a Burgundy wine estate producing pure, aromatic wines from Pinot Noir and Chardonnay. The operation is based in Pommard but it makes a large range of wines from numerous appellations mostly located in the Côte de Beaune. Jean-Marc Boillot worked with his grandfather Henri Boillot between the late 60s and 1984 when he became winemaker for Olivier Leflaive. He created his own domaine in 1989 after inheriting vines from his grandfather, and later from his maternal grandmother, Etienne Sauzet's daughter.
