The 1995 Ponsot Chambertin Grand Cru hails from a solid, if challenging, Burgundy vintage, where top domaines managed to produce superb wines that are still drinking beautifully almost three decades later. Domaine Ponsot is renowned for its traditional winemaking, including late harvesting, avoiding new wood, and no filtering, which results in spectacularly rich wines. This Grand Cru typically offers complex aromas of forest floor, leather, and earthy notes, intertwined with red cherry, cranberry, oak, plum, and black fruit.
Given its age, this 1995 vintage is likely to present a beautiful evolution of tertiary aromas, showcasing the elegance and depth that mature Burgundy can achieve. When handling such a venerable bottle, be mindful of the cork and capsule, which may be fragile. It's advisable to use a Durand opener or an Ah-So wine opener for older corks. Decanting is recommended for older wines to allow them to breathe and to separate any sediment, but do so gently and just before serving to preserve delicate aromas. Serve at around 16°C.
Food pairing suggestions: This exquisite red Burgundy pairs wonderfully with classic dishes such as roasted beef, veal, poultry, or game like venison.
Event suggestions: Perfect for a significant anniversary celebration, a sophisticated dinner party, or a contemplative evening for serious wine collectors. 【Traditional winemaking yielding spectacularly rich, age-worthy wines】
