Expect a complex bouquet of autumn forest, red berries, and subtle farmyard notes, evolving into a haunting nose of cured meat, autumn leaves, and spices. Classic Nuits-Saint-Georges wines are known for their richness and tannic structure in youth, developing elegant flavors of violets, forest berries, leather, and earthy notes with age.
Serving advice for such an aged wine: Given its venerable age, this wine should be handled with utmost care. The cork may be fragile, so a Durand opener or similar two-pronged cork puller is highly recommended. Decanting for a short period (30-60 minutes) can help separate any sediment and allow the wine to open up, but be mindful not to over-decant, as very old wines can fade quickly. Serve at a cool cellar temperature, around 16-18°C (60-64°F).
Food pairing suggestions: This exquisite, aged Burgundy pairs wonderfully with robust dishes such as beef, veal, poultry, or game like venison. Consider classic French preparations that complement its earthy and savory notes.
Event suggestions: This is a wine for a truly special occasion, perhaps a milestone birthday or anniversary, or a gathering of serious wine connoisseurs. It's an experience to be savored, reflecting a bygone era of winemaking.
