FEATURES
The 2016 Jean-François Ganevat Les Chalasses Marnes Bleues Côtes du Jura is a testament to the resilience of the Jura region in a challenging vintage. While 2016 saw significant rainfall and mildew, leading to reduced yields, the dry summer helped the vines recover, resulting in concentrated grapes and excellent quality wines, with whites arguably surpassing the 2015 vintage. This Savagnin is often described as powerful, electric, and dense, with an electric palate, terrific depth, and balance. Tasting notes frequently highlight minerals, smoke, honey, and earthy characteristics, alongside pear, green apple, citrus, and oaky nuances of butter, vanilla, and caramel. Reviewers have also noted flavors of salted almonds, beeswax, hay, and light smokiness, with a complex, dense, and texturally rich profile, complemented by high acidity, lime, and mineral notes. It can be wild and electric, with fermented veggies, sauerkraut, yellow apple, piercing acidity, salinity, and a touch of honey and toasty reduction. 【Considered by some to be Ganevat's best cuvée and one of the greatest sources of Savagnin anywhere, especially from vines planted in 1930 on blue marl soils】
🍴 This wine is an excellent match for poultry, mature and hard cheeses (especially Comté), mushrooms, and mild and soft cheeses. A specific suggestion includes filet of trout cooked in butter with Savagnin, topped with a creamy morel sauce.
🥂 This complex and age-worthy white wine is ideal for a special dinner, showcasing the unique terroir of Jura and the expressive potential of the Savagnin grape.
