FEATURES
Domaine Jacques Puffeney's Arbois Cuvée Sacha is a celebrated white wine from the Jura region, crafted by the legendary Jacques Puffeney, affectionately known as 'The Pope of Arbois'. His retirement has made his 'Dernier Vin' releases, including this Cuvée Sacha, highly sought-after historical treasures. This non-vintage blend typically combines Savagnin and Chardonnay, with the Savagnin often undergoing *sous voile* aging—a traditional oxidative method under a veil of yeast, imparting a unique character reminiscent of fino sherry. The vineyards are rooted in ancient blue, grey, and red marl soils in Arbois, contributing to the wine's distinctive terroir. Puffeney was renowned for his traditional viticultural practices, including manual plowing and a strict avoidance of systemic chemical treatments.

This white wine presents a luminous, deep amber-gold hue. The nose is complex, revealing roasted walnuts, fenugreek, dried orange peel, curry spices, struck flint, beeswax, wet river stones, and pastry cream. Further notes of salty caramel, melon, bitter almond, apple, green apple, cheese, cream, yeast, toffee, caramel, vanilla, honey, leather, straw, lemon, orange, and pineapple can also be found. On the palate, it offers weightless concentration, laser-sharp focus, and incredible tension, with a core of dried citrus oil and green almond, framed by an intense, electric spine of limestone acidity. It's described as vibrant, flavour-packed, and mind-bogglingly complex.
🍴 Food Pairing: This versatile wine pairs beautifully with poultry, mature and hard cheeses like aged Appenzeller or Comté, mushrooms, and mild, soft cheeses such as Vacherin. It also complements rich dishes like roasted Bresse chicken with morels and vin jaune cream, roasted sweetbreads, veal chops, traditional cheese fondue, and Sherry-braised pork cheeks.
