FEATURES
The 2021 vintage in Terrasses du Larzac presented challenges, with delayed and disrupted ripening leading to an extended harvest. Despite this, winemakers managed to achieve balanced alcohol levels. The Clas Mani is a signature wine from Domaine Cassagne et Vitailles, embodying the essence of the Terrasses du Larzac terroir. It's primarily a blend of Syrah, Carignan, and Grenache, cultivated on calcareous clay soils. This wine undergoes a significant aging period of 2.5 years in Chassin barrels. The estate, established shortly after the Terrasses du Larzac AOC in 2015, is dedicated to meticulous vineyard work and separate vinification for each plot.
While specific 2021 tasting notes are limited, the 2020 vintage offered notes of sandalwood, ripe strawberries, raspberries, nutmeg, lavender, and a hint of toast, characterized by soft tannins, intense fruit, and excellent acidity. An earlier 2018 vintage displayed a dark ruby red color, with floral notes, ripe red fruit, ginger, clove, fine oak, pain d'épices, and meaty undertones, alongside grainy tannins and good density.
🍴 The 2018 vintage was suggested to pair well with Cassoulet or other hearty meat stew dishes. The elegant profile of Clas Mani makes it suitable for a range of rich, savory dishes.
🥂 This wine is an excellent choice for special dinners or gatherings where a complex, elegant, and terroir-driven red wine is desired. It also boasts good aging potential, with optimal consumption suggested after 7 to 10 years in the cellar. 【Intense and uncompromising, embodying the quintessence of Terrasses du Larzac terroir】
