FEATURES
The 2012 Vilmart & Cie Les Blanches Voies Blanc de Blancs Premier Cru Brut Champagne is a remarkable expression from the Premier Cru village of Rilly-la-Montagne. The 2012 vintage in Champagne was challenging due to a wet season and mildew, but conditions improved dramatically in late summer with an August heatwave and cool nights, leading to a rapid accumulation of sugar while maintaining acidity. Vilmart & Cie, a récoltant manipulant house founded in 1890, is now overseen by Laurent Champs, the fifth generation. They practice organic and biodynamic viticulture, and all wines are fermented and aged in oak, with malolactic fermentation always blocked to preserve crisp acidity.
This 100% Chardonnay Champagne, from 60-year-old vines in the 'Les Blanches Voies' parcel, is aged 84 months on the lees with a low dosage of 4g/L. Critics describe it as elegant, weightless, and crystalline in its purity, offering notes of lemon peel, white flowers, crushed rocks, and marzipan. It presents a strict, pure, and linear profile with kiwi, lime, and guava aromas, gaining weight and succulence on the palate as it warms. The wine is focused, linear, and juicy, ending with a stylish chalky aftertaste. 【Exceptional balance of richness and freshness】
🍴 Food pairing suggestions: This Champagne is an excellent match for shellfish, crab, and lobster. Its crisp acidity and complex profile also make it suitable for delicate seafood dishes, oysters, or even aged hard cheeses.
