FEATURES
The 2015 Salon Champagne is an exquisite and highly anticipated release, being only the 45th vintage declared worthy of the Salon name since its inception in 1905. Unusually, Salon has released the 2015 vintage ahead of the 2014, signaling its exceptional quality. Founded by Eugène-Aimé Salon, the house embodies a unique philosophy: one grape variety (Chardonnay), one terroir (Le Mesnil-sur-Oger in Côte des Blancs), one vintage, one wine. The 2015 growing season was marked by a hot, dry, and sunny summer, tempered by late August rains, resulting in impeccably ripe grapes. This vintage spent a full decade on its lees, contributing to its complexity and texture.
Tasting notes describe the 2015 Salon as revealing a brilliant golden hue with green and silvery highlights, and a remarkably fine, persistent effervescence. The bouquet is delicate and precise, dominated by white flowers (linden, honeysuckle), chamomile, pineapple, beeswax, and a lingering chalky minerality. On the palate, it's generous and vibrant, offering a captivating balance between saline freshness and brightness. It's noted for its richness, peppery spice, crystalline earth, white peach, quince, and a stone-fruit fleshiness, characteristic of a sunny vintage, yet maintaining delicacy and finesse. The finish is dry, intense, and long, with an intensifying mineral impression of chalk.
🍴 Food pairing suggestions include oysters, langoustines, lobster, crab, shrimp, salmon terrine with oysters in aspic, pig's trotters, sweetbreads, and caviar. Delicate fish like turbot or halibut also complement its character. It also shines brilliantly on its own.
🥂 This Champagne is perfect for celebrating monumental life achievements, significant anniversaries, or as a luxurious indulgence for serious Champagne collectors. 【Only the 45th declared vintage in Salon's history, released ahead of 2014】
