The 2021 Frederic Savart Les Noues Champagne hails from a cool growing season characterized by a rather rainy June and July. Despite the challenging conditions, the resulting wines are promising. Les Noues was one of the only single parcels deemed suitable for a standalone cuvée, having been largely spared from mildew pressure. This particular cuvée saw minimal new wood, a notable departure from previous iterations that utilized about 50% new oak. 【A rare single-vineyard Blanc de Noirs from a challenging 2021 vintage, showcasing Savart's meticulous terroir expression】. Frédéric Savart is renowned for his meticulous, parcel-by-parcel vinification approach.
On the nose, expect a bright and intense bouquet of orange rind, crisp pear, fresh red berry fruit, and brioche. The palate is medium-bodied and bright, driven by a refreshing core of fruit and exhilarating, racy acidity, concluding with a long, distinctly chalky finish. It offers a tense and focused palate with a piercing acidity that carries subtle fruit.
Food pairing suggestions: Excellent with shellfish, crab, and lobster. Also pairs well with rich seafood dishes, oysters, or lighter poultry.
Event suggestions: Perfect for celebrations, as an elegant aperitif, or as a sophisticated accompaniment to a seafood feast. Its incisive and age-worthy character also makes it suitable for those looking to cellar a unique Champagne.
