The 1996 Drouhin Laroze Gevrey Chambertin Craipillot 1er Cru hails from a Burgundy vintage that, while initially structured with high acidity, has proven to be a slow-burner, with wines taking decades to become charming. The winter and spring of 1995-1996 were relatively dry and cool, followed by a drier-than-average summer. The late September/early October harvest saw cold but dry weather, resulting in grapes with good maturity but plenty of acidity. 【This vintage is known for its intense color, good tannin structure, and concentrated Pinot Noir flavor, comparable to the outstanding '88s and '89s】. Expect a wine that, even after nearly three decades, can still show youthful vigor with fruit-forward notes and a strong backbone of softened tannins. Some notes suggest an elegant, perfumed nose with complexity and an attractive freshness. Given its age, this wine may present with evolving aromas of smoke, underbrush, and earthy notes, alongside red fruit characteristics like cherry and strawberry, and subtle oak influences. When serving, handle with care due to the age of the cork and capsule. Decanting is recommended to allow the wine to open up and shed any sediment, but monitor it closely as older wines can fade quickly. Serve at cellar temperature, around 16-18°C (60-64°F). This wine is a superb choice for a sophisticated dinner party or a special anniversary celebration, offering a glimpse into Burgundy's past. It pairs beautifully with classic Burgundian fare such as coq au vin, roasted duck with cherry sauce, or mushroom risotto. For a Western pairing, consider pan-seared venison with a berry reduction or a rich beef bourguignon. On the Eastern side, it would complement dishes like Peking duck or a delicate braised pork belly.
