Tasting Notes: This Champagne displays a radiant pale golden color with straw and silvery reflections. The nose is expansive, revealing notes of lemon curd, white flowers, and bread. It also offers fruity aromas of baked goods, roasted hazelnuts, green plums, and apples upon aeration. Creamy aromas, ripe white fruit, sweet spices, and thyme honey are also present. On the palate, it delivers a mouth-coating richness with a lingering saltiness on the finish. It is fresh, well-balanced, full-bodied, and rich, with a certain softness and generosity, supported by fine bubbles and a delicate finish with hints of Christmas spices. Expect notes of brioche, toast, almond, apple, citrus, honey, minerals, and a creamy texture.
Food Pairing: Ideal as an aperitif, this Champagne truly shines with food. It pairs superbly with seafood like oysters, smoked salmon, and shrimp, as well as cream cheeses. For more substantial pairings, consider lobster or crayfish with toasted brioche, sautéed turbot with puréed root vegetables, classic rabbit with mustard sauce, or roasted chicken. It also complements dishes with fish, poultry, or goat cheese.
Event Suggestions: A sophisticated choice for celebratory toasts, elegant receptions, or a refined brunch. Its gastronomic profile makes it perfect for pairing with a multi-course meal, elevating any special occasion.
