FEATURES
🏰 The 2013 vintage for Georges Laval Les Hautes Chèvres Premier Cru Champagne is crafted from old Pinot Meunier vines, some planted as early as 1930 and 1971. The vineyard has been organically farmed since 1971, with meticulous attention paid to the vines and soils. This Champagne, a pure Pinot Meunier expression, offers a nose with the finest notes of citrus fruits and red, acidic berries, meeting hints of lime and dry herbs. It is lauded as a 'terroir wine par excellence,' showcasing remarkable intensity and purism. The palate reveals extreme power and density, with a wonderful intensity of red currants, pomegranate, barberry, pear, citrus fruit, and dry herbs. It is immensely complex, pure, punchy, and characterized by mercilessly fresh acidity and zero grams of dosage (Brut Nature). Other tasting notes include biscuit and orange on the nose, with a beautiful finesse in texture that builds in power, offering flavors of orange, raspberry, and a light taste of copper. The wine is energetic with beautiful acidity, culminating in a great saline finish and vibrant length. It can also present notes of apple, bruised apple, honey, minerals, mushroom, lime, and grapefruit. 【A terroir wine par excellence, a pure Pinot Meunier Champagne from old vines with mercilessly fresh acidity and zero dosage.】
🍴 This exquisite Champagne pairs wonderfully with Norway lobster and scallop with celery foam and Szechuan pepper, smoked haddock with caviar and rattes potatoes, or baked celery with Périgord truffle and Albufera sauce. It is also an excellent match for shellfish, crab, and lobster, as well as pork, rich fish (like salmon or tuna), and mild, soft cheeses.
🥂 This purist Champagne can be enjoyed now or cellared for at least another two to five years, or even longer, to allow further development. It is considered a 'great wine to be shared by connoisseurs for its own sake', and has been described as 'amazing champagne and one of the most delicious, intriguing and elegant one I've had'.
