FEATURES
The 1996 Dom Pérignon Oenothèque from Moët & Chandon holds a revered place in champagne history, born from a year with nearly perfect weather patterns that offered unprecedented potential for maturation. This vintage is particularly significant, marked by an amalgamation of climatic factors culminating in richly endowed grapes, giving the wine a unique shimmer and vibrancy. The Oenothèque version is the same juice as the regular Dom Pérignon but is aged on the cork and receives a slightly lower dosage upon disgorgement, which for this bottle was in 2008. Tasting notes reveal layers of pastry, lemon, smoke, and toastiness, initially understated but becoming explosive and layered on the palate, with remarkable tension, elegance, and power. It displays praline, citrus, dried figs, with darker iodine and peaty notes emerging. The palate offers a paradox of concentration and movement, with a tense and assertive structure, and an energy that vibrates and explodes into a superbly persistent, trenchant, and persuasive opulence. Other notes include ripe peach, green apple, candied citrus, and a touch of toasty oak, with a long, lingering finish. Critics have praised its magnificent, light, delicate, yet character-packed nature, with a bone-dry character softened by developing toastiness. Given its age, this wine has evolved beautifully, showcasing profound depth of flavor. When serving, handle with care due to the potential fragility of older corks and capsules. Decanting is generally not recommended for aged champagnes as it can dissipate the delicate effervescence and complex aromas; instead, allow it to open slowly in the glass. Serve slightly warmer than standard champagne, around 10-12°C (50-54°F), to allow its intricate bouquet to fully express itself. Food pairings include shellfish, crab, and lobster. Its complexity also makes it suitable for rich dishes like roasted poultry or even aged hard cheeses. This exceptional vintage is ideal for milestone celebrations, significant anniversaries, or as a discerning investment for collectors. 【A tantalizing meeting between power and purity, each tasting is an evocative revelation about how beautifully wine can mature】
BACKGROUND
Dom Pérignon can trace its origins back to the Abbey of Saint Pierre d'Hautvillers in the Champagne appellation of France – the so-called birthplace of Champagne.Dom Pérignon has set down its guiding winemaking principles in a manifesto. This document declares Dom Pérignon's commitment to vintage wine blended from Chardonnay and Pinot Noir grapes. Geoffroy is in charge of declaring a Dom Pérignon vintage. Indeed, he has achieved the rare feat of overseeing the release of five vintages in a row, from 2002 to 2006. Each vintage is unique, with grapes sourced from only the best vineyards in Champagne. Unlike most Champagne producers who harvest the grapes early, Geoffroy prefers to wait for the grapes to ripen slowly.
