FEATURES
Domaine Pattes Loup, under the guidance of Thomas Pico, is recognized as one of the most exciting estates to emerge from Chablis in recent years. Pico is a dedicated organic grower, having bravely converted his family's vineyards to organic viticulture. His wines are celebrated for their distinctive briny minerality, complex and vinous character, vitality, and textured density. The Premier Crus, including Côte de Jouan, originate from hillside vineyards with vines aged between 30 and 55 years, undergoing maturation in older oak, followed by aging in tank or concrete vats. Pico firmly believes that extended *élevage* (maturation) imparts additional dimension, texture, and complexity to his wines. The 2015 vintage, bottled in late 2017, saw 20% concrete egg and 80% barrel maturation.
The nose reveals a strong presence of acacia and honeysuckle, alongside ripe lemons and peaches. On the palate, it is notably punchy and assertive with a long, crisp acidity. Expect notes of oak, butter, and vanilla, complemented by apple, pear, green apple, honey, minerals, stone, and citrus. The finish is characterized by a hazelnut nuance. Overall, these wines are described as deep, round, and dense, with a textural, creamy quality and good viscosity, embodying the essence of Chablis with its signature briny minerality. The drinking window for this vintage is projected from 2018 to 2025.
