FEATURES
The 1993 Dom Pérignon Oenothèque (now known as P2) is a testament to the impressive aging potential of Dom Pérignon, having matured for years, even decades, in the cellar. This vintage is a blend of high-quality Pinot Noir (45%) and Chardonnay (55%) grapes from Grand Cru and Premier Cru vineyards. The 1993 season in Champagne saw a summer of great length, remarkable for its sunshine and drought until the harvest. Despite some initial concerns about ripeness and acidity levels, the best wines of the year, including Dom Pérignon, brought about good surprises. This pale gold, medium-bodied Champagne opens with complex notes of orange, yeast, brine, toast, mushroom, truffle, and dried herbs, offering plenty of freshness. On the palate, it has a precise finish of sweet citrus fruit and honey flavors. Other tasting notes include hints of dried herbs, candied grapefruit, lemon, spicy cinnamon, freshly cooked biscuits, and raisin, leading to a dense Champagne with an abundance of flavor and development. It is described as remarkably youthful on the nose, with toasty gunpowder meeting lemon, oyster, and chalk, and a tight, crisp, lean, and refined palate. The 1993 Dom Pérignon Oenothèque is considered classy stuff, drinking better than most Champagnes of comparable age. 【Gold medal at the 2012 Mundus Vini】. Serving Advice: For a Champagne of this age, it's advisable to serve it at 10-12ºC (50-53.6ºF) in a flute. While ready to drink, it can continue to develop for many years if stored correctly. Older corks can be fragile, so use a good quality corkscrew and open carefully. Decanting is generally not recommended for aged Champagne, as it can dissipate the delicate aromas and effervescence too quickly. Simply open and pour gently. 🍴 Food pairings that complement its sweet citrus finish and honey flavors include foie gras, white meat, seafood, and pork. It also pairs well with appetizers and savory foods with heavy seasoning. Other suggestions include shellfish, crab, and lobster. 🥂 This exceptional Champagne is perfect for milestone celebrations, intimate anniversaries, or as a sophisticated gift for a discerning wine collector. Its complexity and elegance make it ideal for a luxurious dinner party or a special moment of reflection.
BACKGROUND
Dom Pérignon can trace its origins back to the Abbey of Saint Pierre d'Hautvillers in the Champagne appellation of France – the so-called birthplace of Champagne.Dom Pérignon has set down its guiding winemaking principles in a manifesto. This document declares Dom Pérignon's commitment to vintage wine blended from Chardonnay and Pinot Noir grapes. Geoffroy is in charge of declaring a Dom Pérignon vintage. Indeed, he has achieved the rare feat of overseeing the release of five vintages in a row, from 2002 to 2006. Each vintage is unique, with grapes sourced from only the best vineyards in Champagne. Unlike most Champagne producers who harvest the grapes early, Geoffroy prefers to wait for the grapes to ripen slowly.
