FEATURES
The 2021 Champagne Insu Le Pignon Brut Nature 1er Cru hails from a young winery, Champagne Insu, founded by Pierre-Gabriel Diarra. He represents the fourth generation of winegrowers in Hautvillers, the birthplace of Champagne. After a career in technology, he returned to cultivate his ancestral vineyards, focusing on organic farming (Ecocert certified) and expressing the unique terroir of each plot. The 2021 vintage marks his first production, with champagnes vinified as single varietals and single vintages. These wines are described as rich, textured, and salty, crafted to enhance convivial moments and dining experiences. The winemaking philosophy emphasizes spontaneous fermentation, no filtration or fining, and aging in noble vessels like barrels, casks, or stoneware. This particular Champagne is a Blanc de Noirs, made from Pinot Noir grapes from old vines (over 50 years old) grown on clay-limestone soil. It undergoes direct pressing, spontaneous fermentation, and 12 months of aging in fûts, followed by disgorgement after 36 months. 【A testament to terroir and craftsmanship, without artifice, reflecting the identity of each plot.】
Tasting notes suggest a round, floral, and elegant sparkling wine. It is described as tense, mineral, and enveloping on the palate, with a fine, integrated bubble and a vibrant, racy character built on a saline finish. Some general Champagne tasting notes include high acidity, nutty, red fruits, and brioche, combining freshness and body.
Food pairing suggestions for French Champagne often include pork, shellfish, rich fish (like salmon or tuna), and mild and soft cheeses. For this specific wine, a playful pairing with risotto ai porcini (porcini mushroom risotto) is suggested to evoke a regal dining experience.
This Champagne is perfect for celebratory events, intimate gatherings, or as an aperitif to kick off a sophisticated meal. Its unique terroir expression also makes it suitable for wine tasting events focused on natural or organic wines.
