FEATURES
Dhondt-Grellet is renowned for its precision, site expression, and thoughtful approach to Chardonnay, with a focus on key parcels in Cramant, Cuis, and Coteaux du Sézannais. Winemaker Adrien Dhondt practices "peasant viticulture," emphasizing healthy, living soils without actively pursuing organic certification. He favors barrel fermentation with indigenous yeasts, minimal sulfur dioxide, and avoids cold stabilization, filtering, or fining, with wines undergoing eight months of lees aging before tirage. This particular cuvée is now exclusively produced from Grand Cru Chardonnay from Cramant, primarily from the lieu-dit La Garenne, a historic garden site with slightly sandier, clay-influenced soils. It is vinified and aged in oak with full malolactic fermentation and extended lees aging. The NV Extra-Brut Blanc de Blancs Grand Cru Cramant (with a 2020 base vintage) was disgorged with less than one gram per liter dosage. Adrien plans to vinify this cuvée in barrel in the near future, though it is currently vinified in stainless steel tanks.
