Brice Allouchery, based in the Premier Cru village of Écueil in Champagne, took over his family's domaine in 2018. He meticulously manages 3.8 hectares of vineyards, predominantly planted with Pinot Noir, where vines average over 60 years old. A key feature of his approach is the conversion of the entire vineyard to organic farming. His winemaking philosophy emphasizes patience and minimal intervention, utilizing natural fermentations with indigenous yeasts and aging in oak barrels to allow the terroir to express itself. The 1er Cru Les Sablons Extra Brut is a blend of 80% Pinot Noir and 20% Chardonnay, aged for 6 months in French oak barrels followed by 5 years of 'sur lattes' bottle aging, with disgorgement occurring in October 2021.
