Domaine Gauby has been a benchmark in the Roussillon region since the early 1980s. Gérard Gauby and his son Lionel practice biodynamic farming in Calce, utilizing horses for vineyard plowing and natural methods for fertilization and pest control. They age their wines in concrete and wood, eschewing stainless steel. The "Vieilles Vignes" (Old Vines) cuvées, like this 2016 red, are sourced from vines that have been deeply rooted in Roussillon's schist and limestone soils for 30 to 120 years. These wines are celebrated for their elegance, modern style, excellent balance, and concentration, produced with natural yeasts and without chaptalization, acidification, fining, or filtration.
This red wine presents a profile of dark fruit and wild herb complexity, complemented by polished tannins and a cool mineral spine, with remarkable depth achieved through whole-bunch maceration. While specific 2016 tasting notes are limited, other vintages of "Cotes Catalanes Old Vines" have revealed notes of blackberry, plum, black fruit, leather, earthy undertones, smoke, oak, vanilla, chocolate, pepper, menthol, fennel, cherry, red fruit, sour notes, violet, dried flowers, and nutty nuances.
