FEATURES
Billecart-Salmon's Le Clos Saint-Hilaire 1999 is an exceptionally rare and revered Blanc de Noirs Champagne, made from 100% Pinot Noir grapes sourced from a tiny, one-hectare walled vineyard behind the Billecart-Salmon family home in Mareuil-sur-Aÿ. This single-vineyard Champagne is only produced in exceptional vintages, with the 1999 yielding a mere 6,750 individually numbered bottles. The 1999 vintage was a sunny and generous year, producing wines that were immediately attractive. This Champagne is vinified entirely in oak casks and aged for an extended period on its lees, with a very low or zero dosage, allowing the purity of the Pinot Noir and the terroir to shine. Critics describe it as having a deep golden hue and an extremely rich and majestic nose, with savory notes of cocoa, smoked mushroom, forest floor earthiness, grilled hazelnuts, orange marmalade, spiced cherries, plums, and spiced bread. The palate is ample and imposing, with hints of citrus fruit flesh and pears in syrup, against a base note of panettone, culminating in a deliciously chalky root mineral finish. It offers striking depth and grace, drinking like an old Burgundy. Some recent tastings suggest it's at its peak, with delicate, refined bubbles, vivacious orchard fruits, pineapple, minerals, honey, spice cake, and brioche, alongside a very refined acidity.
Serving advice for this older vintage: Given its age, this Champagne should be handled with care. Ensure the bottle has been stored horizontally in a cool, dark, and stable environment. When opening, be mindful of the cork, which may be fragile. Decanting is generally not recommended for Champagne, but allowing it to breathe in the glass for a few minutes can help it open up. Serve slightly chilled, around 10-12°C (50-54°F), in large tulip-shaped glasses to appreciate its complex aromatics.
Food pairing suggestions: This exquisite Champagne is a perfect match for shellfish, crab, and lobster. Its complexity also makes it ideal for truffles, fine seafood, and rich, creamy dishes.
Event suggestions: This is a truly special wine for milestone celebrations, intimate gourmet dinners, or as a prized addition to a serious collector's cellar. 【Rare single-vineyard Blanc de Noirs with exceptional complexity and aging potential】
