FEATURES
The 2007 vintage was an excellent year for white wines in Bordeaux, with relatively cool summer temperatures preserving the finesse of the aromas, followed by dry and warm weather that intensified ripening. Conditions conspired to make 2007 a successful year for whites, with the absence of hydric stress contributing to a wine of comparable, or even superior, quality to the 2006.
Chateau Margaux's Pavillon Blanc 2007 displays a beautiful, gold hue. The nose offers earth, fresh herbs, citrus rind, and pears, with a primal hint of pink grapefruit, lime leaf, nettle, and Mirabelle. Luscious in texture, with energy and depth, the wine is sweet, fresh, and still delivers fresh citrus fruits alongside additional, secondary complexities. It is described as super-racy and stylish, with mineral, lemon, lime, pineapple, and papaya notes. The palate is extremely powerful, with flavors of white peach and minerals, and a chewy impression of extract, boasting incredible volume and explosive fruit. The finish is remarkably long and refreshing. 【 Incomparable for a wine produced from 100% Sauvignon 】.
This sophisticated white Bordeaux is perfect as an aperitif or to complement gourmet French cuisine. It pairs exceptionally well with seafood and shellfish, such as oysters in champagne, grilled lobster, or grilled trout. It also matches beautifully with lighter poultry dishes, veal, pork, sushi, sashimi, and soft cheeses from goat and sheep milk.
Ideal for a sophisticated dinner party, a celebration of fine white wines, or any occasion where a truly unique and elegant white Bordeaux is desired. Serve at 10-12°C (50-54°F) to allow its complex flavors to fully open without losing its finesse.
