FEATURES
Louise Brison's A l'Aube de la Côte des Bars Extra Brut 2019 is a testament to organic viticulture and the unique terroir of the Côte des Bar. Led by Delphine Brulez, great-granddaughter of the founder, the estate cultivates its 15 hectares organically, without chemicals or pesticides. This vintage Champagne, a balanced blend of 50% Pinot Noir and 50% Chardonnay, is vinified and aged for 9 months in oak barrels, followed by 60 months on the lees in bottle. The 2019 Champagne vintage, despite weather challenges like frosts and hailstorms, ultimately yielded high-quality, ripe, and aromatic grapes.
Tasting notes describe it as unfurling like a golden dawn in the glass, with fine, delicate bubbles. The nose offers ripe, juicy fruit such as peach and apricot, intertwined with a luminous freshness. On the palate, it is generous and balanced, exuding serene complexity and a mineral finish reminiscent of early morning air. Further aromas include vibrant yellow fruit, yellow lemon, and lime, with exceptional length and a subtle bitterness on the finish. Discreet at first, it reveals delicate white flowers, peaches, and a hint of brioche.

Food pairing suggestions are diverse and exquisite, including tender venison with celeriac and miso sauce, zesty chicken with blood orange and spicy semolina, elegant scallop carpaccio with Perlita caviar, or creamy chaource cheese. It also pairs well with shellfish, crab, lobster, pork, rich fish, and mild, soft cheeses.
This Champagne is ideal as an aperitif or to accompany delicate dishes, perfect for celebrations, special occasions, or as a sophisticated start to any meal.
