🏰 The 2000 vintage in Bordeaux was widely celebrated as an excellent year, producing wines with great concentration, ripe fruit, and firm yet supple tannins. Château Les Ormes-de-Pez, a Cru Bourgeois Exceptionnel from Saint-Estèphe, benefited from these favorable conditions, resulting in a wine that has aged gracefully. Expect a mature Bordeaux with notes of blackcurrant, cedar, tobacco, and a hint of forest floor. The palate should be well-integrated, offering a harmonious balance of fruit, acidity, and resolved tannins. 【A classic, well-aged Bordeaux from an exceptional vintage】. This wine, being over two decades old, may show some fragility. The cork and capsule might be delicate, so handle with care. Decanting is recommended for about 1-2 hours to allow the wine to breathe and any sediment to settle, but be mindful of its age and avoid over-decanting. Serve at around 16-18°C (60-64°F). 🍴 This mature Saint-Estèphe would be superb with roasted lamb, beef tenderloin with a rich reduction, or aged hard cheeses. For an Eastern pairing, consider a slow-braised beef brisket or a rich mushroom and truffle hotpot. 🥂 An ideal choice for a significant anniversary, a special family gathering, or a contemplative evening with fellow wine enthusiasts appreciating a well-aged classic.
BACKGROUND
Chateau Ormes de Pez is an estate in the Saint Estephe appellation of the Haut Medoc.The estate is located in the north of Saint Estephe near the village of Pez, where there is a mild maritime climate thanks to the influence of both the Gironde estuary and the Atlantic Ocean. There are 35 hectares (87 acres) of vineyards – Cabernet Sauvignon accounts for 54 percent and is mainly planted on gravelly soils, while Merlot makes up 37 percent on sandy clay soils. The rest is planted to Cabernet Franc and Petit Verdot. The grapes are harvested by hand and fermented in temperature-controlled stainless steel vats, and is then aged in French oak, around half of which is new.
