The 2018 Andre Beaufort Polisy Blanc de Blancs Brut is a genuine Champagne that highlights the purity of Chardonnay through rigorous organic viticulture, a practice Andre Beaufort has championed since 1971. This vintage is a testament to outstanding artisanal practices, with only 1,969 bottles produced. Made with Chardonnay from Polisy in the Côte des Bar, the vines benefit from the Langres plateau's climatic conditions and clayey Kimmeridgian soil. Fermentation with indigenous yeasts and manual disgorgement ensure its pure identity with minimal sulfites, and disgorging is always done traditionally "a la volée."
This elegant Champagne displays a straw yellow color with golden reflections and a fine, persistent perlage. Its aromatic profile is fragrant and fresh, offering fruity notes of citrus and white flowers, followed by hints of brioche and pastry. On the palate, it is fresh, balanced, and creamy, with a marked acidity.
