The 2021 Simon Bize Akashiro Rosé is an intriguing Vin de France from Burgundy, part of an experimental, minimal-intervention series by Chisa Bize. The name "Akashiro" translates to "red-white," reflecting its unique nature as a blend of red and white grapes or techniques, often blurring the lines between a light red, a deep rosé, and even an orange wine. This rosé presents a cloudy, dark pink salmon color with copper rims. On the nose, it offers notes of corn chips and soft dried cherry, along with wild strawberry, redcurrant, orange zest, and white flowers, lifted by a subtle hint of fruit drops. The palate is medium-bodied with bright acidity, very salty and crisp, showcasing fermented cherry and strawberry flavors.
