FEATURES
André Beaufort's Polisy Brut is a non-vintage Champagne with a rich history, as Jacques Beaufort pioneered organic viticulture in 1970 after developing an allergy to synthetic treatments. The estate, now run by his sons Constant and Réol, continues these biodynamic practices, using hand-mixed plant and essential-oil preparations. This dedication to natural farming results in a soulful, old-school grower Champagne.
【 Organic Pioneer 】 The Polisy Brut is a blend primarily of Pinot Noir (80%) with 20% Chardonnay, sourced from their holdings in Polisy in the Aube region. It's distinctively dosed with concentrated grape must instead of cane sugar, contributing to its rich, honeyed generosity. Expect an elegant and complex profile, balancing purity of fruit, natural vibrancy, and earthy depth. Tasting notes reveal ripe orchard fruit, honey, brioche, and a gentle mineral lift, alongside yellow fruit, white flowers, wild herbs, fresh-baked bread, fresh-cut apple, and lime zest.
🍴 Food Pairing: This versatile Champagne pairs beautifully with roast chicken, mushroom risotto, richer seafood dishes, or aged Comté cheese. It's also excellent with crudo, ceviche, briny oysters, shellfish, fish, pasta dishes, and light appetizers.
🥂 Event Suggestions: Perfect for celebrations, special occasions, or as an elegant aperitif. Its complexity and organic pedigree make it a thoughtful choice for wine enthusiasts and those who appreciate sustainable practices.
