FEATURES
The 1997 Taittinger Comtes de Champagne Blanc de Blancs is a prestige cuvée crafted entirely from Chardonnay grapes sourced from the finest Grand Cru vineyards of the Côte des Blancs. While 1997 was considered a good, though not great, vintage for Champagne, this particular Comtes de Champagne surprised many with its quality. This exquisite Champagne spends up to 10 years maturing in Taittinger's ancient chalk quarries, developing its profound complexity. It displays a pale, clear yellow color with subtle aromas of vanilla, acacia flowers, and lemon zest. On the palate, it is lemony, vibrant, and fresh, with a very delicate, complex, and long-lasting finish, showcasing excellent overall balance and freshness. Reviews note scents of waffle, coffee, light honey, and pear, with a taste of citrus, white, green, and yellow apples, and hints of coffee, suggesting an autumn character. It's described as creamy with high intensity and acidity, and at its peak, offering notes of vanilla, nuts, crème brûlée, and yellow fruits. 【Excellent overall balance, ever-present freshness and excellent cellaring potential】 Food Pairing: This sophisticated Champagne is a superb match for shellfish, crab, and lobster. It also pairs beautifully with creamy oysters, truffle risotto, or even delicate almond-based desserts. For a more adventurous pairing, consider slow-cooked short ribs or osso buco, especially with the rosé version, though the Blanc de Blancs can also complement richer dishes. Event Suggestions: An exceptional choice for significant celebrations such as weddings, anniversaries, or New Year's Eve. It's also perfect for a luxurious aperitif, a gourmet seafood dinner, or as a thoughtful gift for a Champagne connoisseur.
BACKGROUND
Taittinger is one of Champagne's most famous houses. It is known for its Chardonnay-dominant cuvées, the pinnacle of which is the blanc de blancs prestige cuvée, Comtes de Champagne. The family-owned estate has approximately 290 hectares (710 acres) of vines, around half of which is planted to Pinot Noir, with Chardonnay and a small amount of Pinot Meunier making up the rest. These vineyards contribute 50 percent of Taittinger's output, with the rest coming from growers who have historical relationships with the house.
