Marcel Cabelier's Château Chalon from this vintage is highly anticipated, promising to be one of the greats for long-lived Château Chalon. Château Chalon is renowned as the birthplace of "vin jaune" (yellow wine) and is considered one of the world's finest white wines, undergoing a unique aging process of at least six years and three months under a veil of yeast. This specific aging method contributes to its distinctive and complex oxidative profile.
This Vin Jaune develops a surprisingly powerful bouquet and an exceptionally persistent nutty flavor. Tasting notes often describe intense and vibrant oxidized apple and lemon, with smoky (wood smoke and charcoal), rich, powerful, and very fresh characteristics.
