The 1996 vintage was generally excellent across much of Europe, including France, yielding wines with great aging potential that have held up remarkably well over two decades. Berthet Bondet's Château Chalon is a highly respected Vin Jaune from an organic estate, known for its meticulous, tradition-bound approach. Château Chalon itself is considered the pinnacle of Vin Jaune, exclusively made from Savagnin grapes and aged for a minimum of six years and three months under a protective veil of yeast (flor) without topping up, a unique process that imparts its distinctive oxidative character. This particular wine has received five stars from La Revue du Vin de France and a Best in Show medal at the Decanter World Wine Awards, highlighting its exceptional quality and ability to age for up to 100 years.
This Vin Jaune displays a deep gold color. The nose is complex, revealing notes of white fruits, citrus, spices, walnuts, hazelnuts, tobacco, dried fruits, dried grasses, and curry. On the palate, it offers an amazing balance of power and restraint, with flavors of oxidized apple, nuts, figs, and heady curry spices, underpinned by a refreshing salinity, leading to a long, nutty, and complex finish.
