Fruitière de Voiteur's 2012 Château-Chalon is a distinguished Vin Jaune from the Jura region, an appellation considered the "Grand Cru of Vin Jaune". This unique white wine, made from 100% Savagnin grapes, undergoes a remarkable aging process of six years and three months in oak casks under a veil of yeast (voile), which imparts its distinctive oxidative character, akin to a dry fino Sherry but unfortified. Fruitière Vinicole de Voiteur is notably the largest single producer within this rare appellation. The 2012 vintage, in particular, has been noted for its ripe citrus elements, evolving into a complex array of minerals, spice, earth, and savory notes. Expect a medium gold hue. The nose is rich with aromas of nuts, dried fruits, and panettone. On the palate, it presents good acidity and a distinctive prickly sensation, leading to a savory and exceptionally long finish. Further complexity can include notes of walnut, almond, citrus (lemon, lime), and subtle yeasty, caramel, or honeyed undertones.
This Vin Jaune is an excellent match for poultry, spicy dishes, and mature, hard cheeses such as Cheddar and Gruyere. A classic regional pairing is chicken with cream, Vin Jaune, and morels.
Ideal for special occasions, fine dining, or as a contemplative wine for connoisseurs, given its unique character and extraordinary aging potential, which can extend over a century. It is often served at cool room temperature and benefits significantly from aeration, sometimes requiring up to 24 hours before consumption to allow its complex aromas to fully develop.
