The 1991 vintage in Burgundy was generally considered underrated, despite some challenges like severe April frosts. However, wines from this year, particularly from top producers, have shown excellent development. The Domaine de la Romanée-Conti La Tâche Grand Cru 1991 is a testament to this, having evolved into a wine of remarkable complexity and depth. Tasting notes reveal an absolutely fabulous nose, flooded with sweet, overripe, bloody, gamy, leathery notes, plenty of truffle, and smoky darkness, with a pure seam of ripe fruit. There's a gorgeous suggestion of sweetness with damson plum and demerara sugar, a sensuous animal and beef-stock note, and real complexity. On the palate, expect a flood of sweet berry fruit with brilliant cherry highlights, balanced by crisp acidity and polished, pure tannins. It still possesses plenty of structure, with a coffee-bean, toasty warmth filling out a long, scintillating finish. Some recent tastings in late 2025 describe it as remarkably youthful with a primary nose, showing great energy and complexity.
This mature Grand Cru is perfect for a truly special occasion, perhaps a milestone anniversary or a significant celebration where a wine of profound history and elegance is desired. Given its age, this wine is likely to be quite fragile. Old corks and capsules can be delicate, so careful handling is paramount. It is advisable to use a Durand opener or an Ah-So cork puller to minimize the risk of cork breakage. Decanting is recommended for older wines to separate any sediment and allow the wine to breathe, but do so gently and just before serving to preserve its delicate aromas. Serve at around 16-18°C (60-64°F).
