FEATURES
The 1989 Taittinger Comtes de Champagne Blanc de Blancs Millésime hails from a warm Champagne vintage that produced charming wines, though spring frosts and a cold patch during flowering led to a reduced harvest. This prestigious cuvée is crafted from 100% Chardonnay grapes sourced exclusively from five Grand Cru sites in the Côte des Blancs, utilizing only the first press juice. A small portion, about 5%, is aged for four months in new oak barrels, which contributes subtle toasted notes to the final blend. Comtes de Champagne is renowned for its purity and finesse, and this vintage, in particular, has shown remarkable aging potential. Upon pouring, expect a pristine pale yellow color with very light, abundant bubbles. The evocative bouquet opens with notes of pears and fresh white flowers, evolving with age to reveal a gorgeous nose of toasted coconut, biscuit, white peach, red apple, and a hint of smoke. The palate is unbelievably multilayered, offering bruised red apple, vanilla, and yeast upfront, followed by marzipan, lemon rind, and cinnamon across the mid-palate. The finish is rich with toast and almond notes, salinity, and a hint of lime zest. Despite its age, many find this vintage surprisingly fresh and youthful, while simultaneously showcasing the complex, nutty characteristics of aged Chardonnay. Some describe it as big and rich, with terrific brioche toast and apple fruit complemented by lemon citrus. For a wine of this age, it has developed remarkable complexity and depth. Handle with care, as older corks can be fragile. Decanting is generally not recommended for aged Champagne, as it can quickly dissipate the delicate mousse and nuanced aromas. Serve slightly chilled, ideally between 10-12°C (50-54°F), in appropriate flutes or tulip-shaped glasses to fully appreciate its intricate bouquet and persistent effervescence. This exquisite Champagne is a spectacular choice for a special celebration or an intimate gathering where a mature, complex, and prestigious sparkling wine is desired. It has been noted for being "impossibly fresh and in brilliant lively condition" for its age. Food pairing suggestions include delicate dishes such as shellfish, crab, and lobster. It would also complement rich seafood preparations or fine poultry. 【 One of Champagne's finest and most consistent Blanc de Blancs prestige cuvées, showing remarkable freshness and complexity after decades of aging 】
