The 2006 Pascal Lachaux Bonnes Mares Grand Cru is a testament to resilience, emerging from a challenging Burgundy vintage marked by uneven weather, yet yielding remarkably preserved grapes. This red Burgundy, made from Pinot Noir, presents a medium cherry/ruby hue. On the nose, it offers a forceful bouquet of caramelised meat and oak spice, alongside ripe red berries like raspberry and cherry, complemented by refined floral notes and a hint of spices. The palate is full, sweet, and well-poised, big and bold with a silky texture and excellent balance between fruity sweetness and lively acidity, leading to a very long, refined finish. Some tasters also note elegant austerity, fine tannins, and clean blue fruit flavors, or a perfumed sweetness with honeyed chamomile and subtle stone fruit. 【A testament to resilience and elegance from a challenging vintage】. Given its age, expect an evolving profile where primary fruit has mellowed, giving way to tertiary aromas of forest floor and savory notes. Old corks can be fragile; use a Durand or Ah-So opener. Gentle decanting is recommended to allow the wine to breathe and separate from sediment, monitoring closely to avoid over-aeration. Serve at 16-18°C (60-64°F).🍴 This Grand Cru pairs beautifully with rich dishes such as duck, goose, game birds, wild game, roasted duck, or beef stewed in red wine. Aged cheeses would also be a superb match.🥂 Ideal for a sophisticated dinner, an intimate gathering, or a contemplative tasting event for serious Burgundy enthusiasts, appreciating its evolving complexity.
