FEATURES
The 2023 Chablis vintage, while having its challenges, produced good results for careful growers, with some top wines potentially aging for decades. François Raveneau's Chapelot is a rare find, with production limited to 1,200 to 1,500 bottles annually, and it's not always produced (the last one before 2023 was in 2018). The Chapelot vineyard, with its stony soils and high limestone content, yields wines with incredible tension and a saline, matchstick-reduction character.
Tasting notes describe a slightly riper nose with white peach, apple, lemon confit, quinine, and acacia. The medium-bodied palate is rich, caressing, and seductively textured, with good energy on the impressively long and tightly coiled finish. Other notes highlight precise aromas of lemon zest, green apple, pear, wet stone, oyster shell, delicate white flowers, subtle fresh butter, almond, and a faint smokiness. The palate is taut and vibrant, with linear acidity, citrus, crunchy orchard fruit, and chalky minerality, leading to a long, saline, and mouth-watering finish.
🍴 Food pairing suggestions: Pristine seafood like raw oysters, sea urchin, kingfish crudo, refined fish such as steamed snapper or pan-seared John Dory, elegant starters like asparagus and goat cheese salad, or fresh, creamy goat cheese.
🥂 Event suggestions: This wine is approachable on the younger side but has the stuffing and balance to repay at least a decade of cellaring. It's perfect for a celebratory seafood dinner, a sophisticated lunch, or as a special gift for a Chablis enthusiast. Serve at 11-12°C, and for younger bottles, consider decanting for 30 minutes. 【Rare and highly sought-after Chablis Premier Cru, known for its exceptional tension, minerality, and aging potential】
