Cédric Bouchard, a rapidly rising star in Champagne, earned a reputation as one of the region's most talented young wine producers, even being named Champagne's finest winemaker in 2008 by Gault Millau. His Roses de Jeanne 'Val de Vilaine' is a Blanc de Noirs, 100% Pinot Noir from the 1.5-hectare lieu-dit of Val Vilaine. The 2016 vintage is described as gorgeous, ample, and creamy on the palate, with tremendous textural richness, dazzling from start to finish. Antonio Galloni noted that he couldn't remember a vintage of Val Vilaine that was this complete and harmonious. It's considered a terrific introduction to Cédric Bouchard's wines. Stylistically, Bouchard's Champagnes are unique, deconstructing traditional blending principles by focusing on single variety, single site, and single vintage wines. Low yields, fermentation and aging in tank with indigenous yeasts, very fine mousse, and no fining or filtration allow the purest essence of the grape, site, and vintage to shine through with uncommon precision. 【A benchmark for single-vineyard, single-vintage Champagne purity】. This Champagne is perfect for celebrating milestones or as a sophisticated aperitif. It is also rewarding of time in a decanter to allow its complex layers to unfold, revealing tart red fruits, savory and spicy brambly fruit, and eventually salty and candied fruit flavors. Food pairings include roast white meats, fresh seafood, white sauce dishes, crunchy greens, and fried food. It also pairs well with shellfish, crab, and lobster.
