🏰 The 1985 Chateau d'Yquem is a legendary Sauternes, often lauded for its exceptional balance and longevity. While specific vintage reports for 1985 are less common in recent searches, Yquem's reputation for producing outstanding sweet wines in nearly every vintage holds true. Expect a wine that has evolved beautifully over the decades, showcasing a complex bouquet of dried apricots, honey, marmalade, and a hint of botrytis. On the palate, it should be rich and unctuous, yet with a vibrant acidity that keeps it fresh and lively, leading to an incredibly long finish. 【 A benchmark for Sauternes, renowned for its age-worthiness and complexity 】. This is a wine that speaks of history and meticulous craftsmanship. When approaching such a venerable bottle, remember that older corks can be fragile, so a Durand opener or similar tool is highly recommended. The capsule might also be delicate. Serve slightly chilled, around 10-12°C (50-54°F). Decanting is generally not necessary for Yquem of this age, as aeration can sometimes diminish its delicate aromatics; however, a quick pour through a fine mesh strainer can help catch any sediment or cork particles. Handle with care to preserve its delicate structure.
🥂 This 1985 Yquem is perfect for a truly special anniversary, a significant milestone celebration, or a contemplative evening with close connoisseurs. It's a wine that commands attention and provides a memorable experience.
🍴 For food pairings, consider classic matches like foie gras (pan-seared or terrine), Roquefort or other blue cheeses, and fruit tarts or crème brûlée. For an Eastern twist, try it with a delicate almond jelly or a light mango pudding.
