FEATURES
🏰 The 1985 Dom Pérignon Oenothèque is a testament to the enduring quality of exceptional Champagne, showcasing a remarkable evolution with over three decades of aging. This vintage was part of an exceptional year, allowing grapes to flourish under ideal conditions. Critics have lauded its inviting and exuberant character, with Robert Parker's Wine Advocate giving it a 95-point score, describing it as bursting with aromas of apples, pears, buttered toast, tarte tatin, and smoke. Jancis Robinson MW, while noting its deep gold color and biscuity nose, found it still tangy and tense, combining richness and acidity. The Oenothèque range, now succeeded by P2 and P3 labels, represents a later release of the same vintage, offering enhanced complexity and depth. 【Its ability to maintain remarkable youthfulness and complexity after decades is a key USP】. Expect a medium lemon-straw color, with praline and toasted hazelnut dominating the nose, complemented by lemon curd and butterscotch nuances. The palate is rich with a decadently silken texture, refreshing acidity, and flavors of brioche, subtle earthy/savory notes, and minerality. 🥂 This exquisite Champagne is perfect for milestone celebrations, significant anniversaries, or any occasion demanding a truly memorable and aged sparkling wine. Its complexity and refined character make it ideal for intimate gatherings where its nuances can be fully appreciated. Given its age, handling with care is paramount. Old corks can be fragile, so use a proper Durand or two-pronged corkscrew. Ensure the bottle has been stored horizontally in a cool, dark, and stable environment. Serve at 10-12°C (50-54°F) to allow its intricate aromas to unfold. Decanting is generally not recommended for aged Champagne as it can dissipate the delicate mousse and aromas too quickly; instead, open it gently and pour directly into flutes or tulip-shaped glasses. 🍴 For food pairings, the 1985 Dom Pérignon Oenothèque shines with luxurious and umami-rich dishes. Classic matches include fresh oysters, lobster thermidor, or truffle risotto. Aged cheeses, mushrooms, and even preparations of egg can beautifully complement its savory depth. For something unexpected, consider roasted guinea fowl or pheasant with cream-based sauces, or a lemon tart for dessert, where its acidity creates a natural bridge.
BACKGROUND
Dom Pérignon can trace its origins back to the Abbey of Saint Pierre d'Hautvillers in the Champagne appellation of France – the so-called birthplace of Champagne.Dom Pérignon has set down its guiding winemaking principles in a manifesto. This document declares Dom Pérignon's commitment to vintage wine blended from Chardonnay and Pinot Noir grapes. Geoffroy is in charge of declaring a Dom Pérignon vintage. Indeed, he has achieved the rare feat of overseeing the release of five vintages in a row, from 2002 to 2006. Each vintage is unique, with grapes sourced from only the best vineyards in Champagne. Unlike most Champagne producers who harvest the grapes early, Geoffroy prefers to wait for the grapes to ripen slowly.
