🏰 The 1991 Pavillon Rouge du Château Margaux emerged from a challenging vintage marked by a significant April frost, though Cabernet Sauvignon vines on gravel ridges were fortunately spared. A hot, dry summer allowed for good maturity, despite heavy rainfall before harvest. Robert Parker notably considered Margaux's 1991 a "candidate for 'wine of the vintage'". This Bordeaux blend red displays a deep ruby colour and a tight yet promising nose of rich cassis, licorice, and toasty new oak. It is dense, medium to full-bodied, with plenty of depth, moderate tannin, and a long, rich finish. Some tasters have found a refined, balanced, and aged nose with developed fruit, while others noted weaker aromatics and less fruit remaining. 【As the esteemed second wine of Château Margaux, it offers a more accessible expression of its prestigious Grand Cru Classé style.】
🍴 This mature Bordeaux red is a superb companion to classic meat dishes. Consider roasted beef, lamb, venison, or poultry. Its elegance also makes it suitable for dishes with earthy notes, such as mushroom-based sauces.
🥂 The 1991 Pavillon Rouge is perfect for a sophisticated dinner, a special family gathering, or an occasion to enjoy a mature Bordeaux without the full price of the Grand Vin. To ensure the best experience, stand the bottle upright for a few days before serving to allow any sediment to settle. Decant gently for 30-60 minutes to allow it to open up and separate from any sediment. Serve at around 16-18°C.
