🏰 A highly anticipated 2023 Chassagne Montrachet Vieilles Vignes from the acclaimed Pierre-Yves Colin-Morey, promising a precise, mineral-driven expression of Chardonnay from old vines. The 2023 vintage is very recent, and specific detailed reports for Pierre-Yves Colin-Morey Chassagne Montrachet Vieilles Vignes 2023 are still emerging. However, Pierre-Yves Colin-Morey (PYCM) is celebrated for crafting precise, mineral-driven white Burgundies. This "Vieilles Vignes" (old vines) bottling from Chassagne Montrachet is expected to offer a blend of richness and minerality, characteristic of the appellation, with notes of white flowers, stone fruit, citrus, and a saline edge, often with a touch of oak.
🍴 This youthful white Burgundy will be a fantastic partner for rich seafood dishes like pan-seared scallops, grilled prawns, or roasted cod. It also complements delicate poultry in cream sauces, or fresh goat cheese.
🥂 Ideal for early tasting by enthusiasts keen to follow its evolution, or for cellaring to allow its complexities to develop. Given its youth, it will benefit from a few years in the cellar. Serve chilled at 12-14°C (53-57°F).
