FEATURES
🏰 The 2007 vintage for Tuscany was generally excellent, marked by a mild winter, warm spring, and a hot, dry July followed by welcome rains in August, which ensured regular ripening. Mother Nature was particularly generous, leading to a strikingly aromatic and tastefully balanced blend of Cabernet Sauvignon and Cabernet Franc. This Sassicaia displays a ruby red colour. On the palate, it explodes with masses of rich, opulent fruit, offering gorgeous length and seamless beauty. Dark wild cherries, plums, spices, minerals, and herbs develop in the glass. Antonio Galloni described it as an "especially bold, perhaps slightly uncharacteristic Sassicaia in its extroverted personality, but it is beautiful all the same." Neal Martin noted raspberry, black olive, scorched leather, loganberry, and a touch of spice on the nose, with tarry black fruits and white pepper on the palate. It possesses a powerful, determined, and confident character, with bold fruit, spice, leather, and tobacco aromas. The palate is finessed and nuanced, with silky tannins and a long, smooth finish. 【 The 2007 Sassicaia is an iconic Italian wine from Bolgheri's landmark vineyard, offering an elegant bouquet and significant ageing potential. 】
🍴 This Sassicaia is an excellent partner for refined dishes with rich flavours and textures. It's perfect with grilled or roasted meats like Bistecca alla Fiorentina, roast leg of lamb with garlic and rosemary, or slow-cooked pork shoulder with balsamic glaze. It also pairs beautifully with wild mushroom risotto with truffle shavings, Pici with Wild Boar Ragù, or aged Parmigiano Reggiano.
🥂 An investment symphony for fine wine connoisseurs, this wine is designed to age with charm. It is immensely appealing today and should drink beautifully straight away, though it is an age-worthy wine that was recommended not to be opened before 2018. Ideal for special dinners and celebrations.
