🏰 The 1988 vintage for red Burgundy, particularly in the Côte de Nuits where Chambertin resides, was excellent, producing classic, long-lived wines with good depth of fruit. The growing season saw a warm, dry spring, followed by mixed summer weather, but a crucial warm and dry September ensured optimal ripening for the Pinot Noir grapes. While yields were lower, the resulting wines were highly concentrated and initially quite tannic, destined for long cellaring. Many of these wines are now reaching their peak, offering superb drinking experiences, though their window of optimal enjoyment may be gradually closing. Charles Vienot, established in 1735, was a respected négociant in Burgundy, known for trading fine wines and was even a founding member of the Confrérie des Chevaliers du Tastevin. Expect a complex and evolving bouquet, marrying notes of dried red fruits, black cherry, plum, undergrowth, truffle, tobacco leaf, leather, and subtle hints of spice, cedar, and dried rose. On the palate, it presents a medium-full body with a silky texture, finely melted tannins, and a perfectly integrated, nervous acidity that provides freshness and length. Flavors of red and black berries, grilled meat, wood smoke, and cedary wood may also be present, showcasing great depth and intensity. 【Excellent aging potential and classic flavor】 This 1988 Chambertin Grand Cru is a mature wine, and handling it with care is paramount. Expect some sediment, and the cork may be fragile. It's advisable to stand the bottle upright for at least a week, or even a month, to allow any sediment to settle. When opening, consider using a two-pronged Ah-So opener or a Durand to minimize cork breakage. While some argue against decanting old Burgundy due to its fragility, a gentle decant just before serving can help separate the wine from sediment and allow it to express its tertiary aromas, provided it's not overly fragile. Serve this Grand Cru slightly cool, between 16-17°C, using large-bowled glasses to fully appreciate its delicate and complex bouquet. 🍴 This elegant red Burgundy pairs beautifully with refined dishes such as roast pigeon, duck breast, game birds, veal sweetbreads, or slow-cooked lamb. Charles Vienot was a highly regarded winery with many vineyards, but they were sold to Boisset in the 1980s. Boisset uses it as a label, mostly for Veritas.
