🏰The Simonnet Febvre Chablis Fourchaume 1er Cru, from a Premier Cru vineyard exposed to the west/south-west, consistently delivers ample and harmonious wines with a distinctive mineral note, embodying the charming character of the Fourchaume terroir. This Chablis 1er Cru comes from a very sunny terroir but maintains a nice freshness. The vines average 40 years old, grown on Kimmeridgian clay-limestone soil. It is aged 10-12 months on fine lees, with some vintages seeing 25% oak barrel aging. Simonnet-Febvre is also certified for organic wine production for some vintages.
Expect a pale yellow color with aromas of ripe fruits, citrus, and mineral undertones. The palate offers beautiful roundness, a vibrant, even explosive freshness, and a long, acidic, and mineral finish, sometimes with notes of green apple, lemon-lime zest, and hazelnut. A beautiful salinity often marks the ample mouthfeel.
