Vincent Dauvissat, Chablis Les Clos Grand Cru, 1999
🏰 Vincent Dauvissat is celebrated as one of Chablis' most prestigious producers, renowned for his unwavering commitment to expressing authentic terroir. His Les Clos Grand Cru is particularly esteemed for its remarkable concentration and complexity, all while maintaining impeccable balance. 【Remarkable concentration and complexity from a prestigious Chablis Grand Cru terroir】 The vineyard's Kimmeridgian limestone and marl soil, rich with marine fossils, is the cornerstone of the wine's hallmark minerality. The 1999 vintage has been described as a 'rich vintage,' though some notes suggest that certain bottles might be past their peak or reflect a 'mediocre vintage.'
This Grand Cru Chablis reveals powerful aromas of citrus fruit and white-fleshed fruit, complemented by spicy and subtly woody notes. On the palate, these aromas intertwine with a lovely mineral quality, salinity, and acidity, offering great focus and sublime length. Expect notes of lemon zest, orange blossom, fresh bread, crushed seashell, white florals, and distinctive wet stone minerality. Some older bottles may also show honeyed fruit, yuzu, and seashell with a rich, full-bodied mineral finish.
🍴 This Chablis Grand Cru is a superb match for classic pairings such as fresh oysters, grilled shellfish, rich fish dishes like turbot or sea bass, and poultry in cream sauces. Its complexity can also complement delicate white truffle dishes.
🥂 While approachable after several years, this Grand Cru truly reveals its magnificence with extended aging. However, given the mixed notes on the 1999 vintage, it's a wine to open with caution and perhaps have a backup. It's best suited for a tasting focused on aged Chablis or a special meal where its complex, evolved character can be appreciated. Some advise to 'drink up!' if it's showing signs of broadening flavors.
