Vincent Dauvissat, Chablis Le Forest 1er Cru, 1996
🏰 The 1996 Vincent Dauvissat Chablis Le Forest 1er Cru is a 【legendary white Burgundy, showcasing the profound aging capability of Chablis from a revered producer in a high-acid, long-lived vintage】. 1996 was a classic, powerful vintage in Chablis, known for its vibrant acidity and mineral intensity, making wines built for the long haul. Expect this wine to display a deep golden hue. The nose would be incredibly complex, with evolved notes of wet stones, oyster shell, honey, dried white flowers, and perhaps a hint of hazelnut or brioche, layered over its youthful citrus and green apple core. The palate would be intensely mineral-driven, with piercing acidity that has mellowed into a harmonious structure, offering remarkable depth, tension, and a very long, saline finish.
🍴 This mature Chablis is an exceptional pairing for oysters, grilled sea bass, rich seafood stews, or poultry in a creamy mushroom sauce. It also complements aged Comté or other firm, nutty cheeses.
🥂 Ideal for a connoisseur's tasting, a special anniversary, or any occasion demanding a white wine of profound complexity and history. This wine is likely in its peak drinking window, offering a truly intellectual and sensory experience. Decanting is generally not recommended for very old Chablis, but a brief aeration in the glass can be beneficial. Always check the cork and capsule condition carefully.
